Black-eyed bean and tofu burgers

Black-eyed peas and tofu burgers, meatless, with flavor, nutrition and balance in every bite!

Ingredients:


200 g black-eyed beans, boiled and drained

150 g firm tofu, crumbled

1 small onion, chopped

1 carrot, grated

2 tbsp olive oil

3 tbsp oat flour (or chickpea flour)

1 tsp smoked paprika

1/2 tsp oregano or thyme

1/2 tsp cumin

Salt and pepper

1 tbsp lemon juice (optional for extra flavor)

Chopped parsley or coriander (optional)



Execution instructions:


  1. Add the black-eyed beans, crumbled tofu and all the remaining ingredients to a bowl or food processor.


  2. Mash lightly — you want the ingredients to be well combined but still retain some texture.


  3. Leave the mixture in the refrigerator for 20–30 minutes to firm up.


  4. Shape 6–8 burgers and place them on a baking sheet lined with parchment paper.


  5. Bake in a preheated oven at 190°C for about 25–30 minutes, turning halfway through, until they turn brown and firm.
