Minced mushrooms
Minced mushroom: a tasty base for pasta dishes, pies and tacos, without meat but with rich flavor!

Ingredients:
500 g mushrooms (pleurotus, champignon or mixed)
1 large onion, chopped
2 cloves garlic, crushed
2 tbsp olive oil
1 tbsp tomato paste
1/2 cup grated or pureed tomato (optional, if you want it "roasted")
1 tsp paprika (sweet or smoked)
1/2 tsp thyme or oregano
1 tsp soy sauce or tamari (for extra umami)
Salt and pepper
Execution instructions:
Wash and drain the mushrooms well. Finely chop them by hand or pulse them in a food processor with a few "pulses" until they resemble minced meat.
Heat the olive oil in a non-stick pan and sauté the onion and garlic until soft.
Add the mushrooms and sauté over high heat until their liquids evaporate and they turn color.
Add the paste, tomato (if using), spices, soy and mix well.
Cook for another 5–10 minutes until the sauce thickens and the minced meat dries out a bit.
Serve over pasta, in tortillas, or use it as a filling.
