Sweet potato stuffed with tuna, yogurt and herbs
Stuffed sweet potato with tuna and yogurt, a hearty meal with protein and balanced carbohydrates.

Ingredients (for 2 servings):
2 medium sweet potatoes
1 can of tuna in water (160 g, drained)
100 g strained yogurt (preferably sheep's)
1 tsp mustard
1 tsp olive oil
1 small spring onion, finely chopped
A little lemon juice
Salt, pepper
Fresh herbs (e.g. parsley or dill)
Execution instructions:
Wash the sweet potatoes thoroughly and bake them whole, with the skin on, at 200°C for 40–50 minutes, until soft.
Meanwhile, in a bowl, mix the tuna with the yogurt, mustard, oil, lemon, herbs and spices.
When the sweet potatoes are cooked, cut them in half lengthwise and press them lightly to open them like "boats."
Fill them with the tuna mixture and serve.
