Sweet potato stuffed with sautéed mushrooms and avocado

Stuffed sweet potato with mushrooms and avocado, a complete plant-based meal with fiber and good fats.

Ingredients (for 2 servings):


2 medium sweet potatoes

200 g mushrooms, sliced

1 tbsp olive oil

1/2 tsp thyme or oregano

1 ripe avocado

1 tsp lemon juice

Salt, pepper

Optional: nutritional yeast flakes or a little smoked salt



Execution instructions:


  1. Bake the sweet potatoes as in the previous recipe.


  2. Sauté the mushrooms in olive oil for 8–10 minutes, with a little thyme, salt and pepper, until golden brown.


  3. Mash the avocado with the lemon juice, a little salt and pepper.


  4. Open the sweet potatoes, add a layer of melted avocado and top with the sautéed mushrooms.


  5. Serve with optional topping (nutritional yeast, fresh parsley or chili flakes).
